Trying to find healthy food for the office can be frustrating at times. Not only is preparing your lunch at home cheaper than buying lunch out every day but it also can be healthier. Below are some of the lunches I have, let me know if you try any!
Monday – Chicken Caesar, Rice and Vegetables

This is a quick and easy lunch to make. Simply season the chicken with your favourite seasoning, I like cajun or peri peri. Cook in the oven for 35 minutes. Whilst chicken is cooking cut and boil broccoli in pan for 8-10 minutes. Drain and transfer to a container. When the chicken has 10 minutes left slice tomatoes in half and add to the tray the chicken is cooking on. Once cooked add to the container, I like to use micro rice for convenience. Then when at work all you need to do is heat up in the microwave.
Tuesday – Tuna Pasta Salad

Not only is this healthy and filling it’s also quick and easy to make. Boil pasta for 8-12 minutes, prepare your salad. I like to have sweetcorn, peppers, olives, leafy greens and tomatoes. When pasta is cooked mix tuna, salad and pasta in a bowl and transfer to a container. Season with salt, pepper and salad dressing.
Wednesday – Veggie Wrap

Love this, it’s light, tasty and you can change what filling you have. Grab your tortilla wraps spread your favourite sauce, you can have hummus, mayo, cream cheese or hot sauce. Then start filling with salad and veggies.
Thursday – Ham and Egg Salad

A delicious lunch meal that takes no time or effort to prepare. Boil your eggs for 5 minutes for soft boiled. Whilst boiling prepare your salad in a container and slice your honey mustard ham and add it all together. Cut your eggs and pop them into your container. You can season with dressing, salt & pepper.
Friday – Avacodo sandwich

Who doesn’t love avocado? This simple sandwich is delicious and quick to make. Simply peel and smash or slice your avocado, cut tomatoes in half butter bread and assemble the sandwich. You can add more salad if you wish.
