These 3 tasty cultural foods anyone can make are easy and bursting with flavour. One of the great things about going on holiday is tasting all the different types of food, the best thing about this is you don’t have to leave your kitchen!
Pad Thai
This is one of my favourite dishes to order when getting take out but this recipe is just as tasty. This recipe can be eaten with or without meat.
Ingredients
- 15g Thai rice stick noodles
Sauce
- 3 tbsp brown sugar
- 2 tbsp oyster sauce
- 2 tbsp tamarind puree
- 2 tbsp fish sauce
Stir fry
- 3 tbsp vegetable oil
- 1/2 onion sliced
- 65g beansprouts
- 2 garlic cloves
- 2 eggs whisked
- 32g peanuts chopped finely
- 150g chicken breast or shrimp or pork or none for veggie thinly sliced
- garlic chives cut
- lime for serving
Instructions
In a bowl pour boiling water over noodles and soak for 5 minutes. Drain and rinse under cold water.
Next for the sauce mix all the sauce ingredients together in a bowl.
In a large pan or wok heat oil and add the garlic and onion. Then add chosen meat and cook until cooked through.
Push to the edge of the pan and pour the egg on the other side and whisk. Add bean sprouts, noodles and sauce.
Toss all together until noodles and sauce are combined.
Add garlic, chives and half the peanuts. Toss together until mixed well.
To serve add the remaining peanuts and squeeze over the lime juice.
Spicy Mexican Rice
This tasty dish can be served vegan or with your chosen meat.
Ingredients
- 250g rice
- 1bsp tomato puree
- 1/2 tsp ground cumin
- 4 chopped garlic cloves
- 2 red peppers sliced
- 1 finely chopped onion
- 1 tbsp paprika
- 2 tbsp crushed chilli flakes
- 450ml vegetable stock hot
- chopped coriander
- sliced spring onions
- 100g sweetcorn
- 100g black beans
Instructions
In a large pan heat oil then add the onion, peppers, sweetcorn, black beans, cumin, garlic and chilli flakes. Cook until soft. Mix in the tomato puree and paprika, then stir in the rice.
Pour in the stock, cover and bring to a boil. Stir and cook over low heat for 10 minutes. Once cooked add coriander and spring onions.

Chicken Vindaloo
Spice up your kitchen with this delicious dish bursting with herbs and spices.
Ingredients
- 900g chicken
- 1 chopped onion
- 2 chopped serrano peppers
- 120ml white vinegar
- 1 tbsp tomato puree
Marinade
- 6 cloves garlic finely chopped
- 3 tbsp chilli flakes
- 1 tbsp paprika
- 1tbsp turmeric
- 1/2 tsp cinnamon
- 1tbsp ginger
- 1/2 tsp cumin
Instructions
In a large bowl mix together your marinade ingredients with the vinegar and pour over chicken, rub into meat. Cover and refrigerate for at least an hour. Longer the better.
In a large pan heat oil and add the onion and peppers, cook until they are soft.
Then add the chicken and marinade cook until brown. Stir in the tomato puree. Add 100ml water until it becomes a sauce, add more water if needed. Then simmer on low heat for 20 minutes.
Serve over rice and with naan.
