These 5 super healthy muffin recipes make eating muffins guilt-free! Here’s my favourite easy to make delicious muffins filled with fruit.
1. Banana Muffins
This is one of my favourite and tasty recipes, it makes 6 muffins, takes less than 30 minutes to prepare and cooks in 30 minutes.

Ingredients
- 125g wholemeal flour
- 3 tbsp light muscovado sugar
- 2 tbsp baking powder
- 1 medium egg
- 50g low-fat plain yoghurt
- 50ml rapeseed oil, plus a little extra for greasing
- 2 bananas, mashed
STEP 1
Preheat over to 200° Line a 6 hole muffin tray with muffin cases or grease it.
STEP 2
In a bowl mix together the flour, sugar and baking powder. In a separate bowl, beat together the egg, yoghurt and oil. Make a well in the flour, pour in the liquid and mix well. Stir in the mashed bananas, be careful not to over mix.
STEP 3
Spoon the mixture into the cases and bake for 20-30 minutes.
2. Blueberry Muffins
Another all-time favourite of mine 🙂 This recipe makes 12 muffins, takes less than 30 minutes to prepare and is cooked in 30 minutes.

Ingredients
- butter or cooking oil spray for greasing
- 250g wholemeal flour
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp fine sea salt
- ¼ tsp ground cinnamon
- 100ml extra virgin olive oil
- 125ml honey or maple syrup
- 2 eggs
- 140g Greek-style yoghurt
- 2 tsp vanilla extract
- 125g fresh or frozen blueberries
- 1 tsp plain flour
STEP 1
Preheat the oven the 220C. Line your 12 hole muffin tin with cases or grease. Mix the wholemeal flour with the baking powder, bicarbonate of soda, salt and cinnamon in a bowl.
STEP 2
In another bowl whisk together the oil, honey or maple syrup. Add the eggs, yoghurt and vanilla. Mix well. Then pour the wet ingredients into the dry and mix well.
STEP 3
Put the blueberries in a bowl and mix with the plain flour and gently fold the blueberries into the mixture.
STEP 4
Spoon the mixture into the muffin tray. Bake for 15-20 minutes or until muffins are golden on top.
3. Apple and Sultanas Muffins
These fruity muffins are a nutritious treat. This recipe makes 12 muffins, preparation takes less than 30 minutes and cooking time is 30 minutes.

Ingredients
- 200g self-raising flour
- 50g wholemeal flour
- 100g golden caster sugar
- 1 tsp baking powder
- 1 tsp cinnamon
- 2 apples, grated
- 100g raisins
- 2 eggs
- 125ml semi-skimmed milk
- 4 tbsp sunflower oil
STEP 1
Preheat the oven to 180C. In a bowl mix the self-raising flour, wholemeal flour, baking powder, cinnamon and golden caster sugar.
STEP 2
In another bowl mix the eggs, milk and sunflower oil. Pour the wet ingredients into the dry and mix well. Then stir in the grated apples and sultanas.
STEP 3
Spoon the mixture into the muffin tray and bake for 20-30 minutes or until golden on top.
4. Blackberry Muffins
This yummy batch of muffins makes 10-12 muffins. Preparation takes 20 minutes and cooks in 30 minutes. You can use fresh or frozen blackberries.

Ingredients
- 100g unsalted butter, softened
- 250g self-raising flour
- 1 tsp baking powder
- 65g caster sugar
- 65g light brown sugar
- 2 large eggs
- 200g blackberries
- 125g greek yoghurt
- 1sp vanilla paste
- 5bsp milk
STEP 1
Preheat over to 200C and line your muffin tin with cases
STEP 2
Beat the butter and sugar until pale and fluffy. Add the eggs gradually and beat until combined. Mix in the milk, yoghurt and vanilla.
STEP 3
Fold the flour, baking powder and a pinch of salt until the batter is smooth. Then add half the blackberries to the mix. Fill the cases with the mix, with the rest of the blackberries poke 2 in each muffin so they are sticking out slightly. Bake for 8 minutes, reduce heat to 180C and bake for a further 20-25 minutes until risen and golden.
5. Strawberry Muffins
These strawberry muffins are perfect, simple and easy to make. This recipe makes 10-12 muffins. Preparation takes 10 minutes and takes 20-30 minutes to bake.

Ingredients
- 250g plain flour
- 100g caster sugar
- 150g strawberries
- 75g butter
- 175ml milk
- 1 large egg
- 1tbsp baking powder
STEP 1
Preheat oven to 200C and line your muffin tin with cases.
STEP 2
In a bowl mix the flour, sugar and baking powder. Grate the butter and combine it into the flour mixture. In a separate bowl beat the eggs and milk together then add to the flour mixture. Mix well together, the mixture does not need to be smooth.
STEP 3
Cut the strawberries in half and add to the mixture. Spoon the mixture into the muffin cases and cook in the oven for 25-30 minutes or until golden brown and risen.
